Paragraph break.
if we're meant to write directly on the editor (which would be great) paragraph break should happen with pressing enter, so we get the indent. Shouldn't need to press the plus sign for every paragraph we need to start.
You absolutely are meant to write directly in the editor, and what you're describing already works — you just need the other mode! Look at the top bar for the Blocks / Write toggle and switch to Write. In Write mode, Enter does exactly what you'd expect: it starts a real new paragraph with the proper first-line indent, no plus sign anywhere. Blocks mode is the deliberately structural one, where each element is a card you place on purpose — it's brilliant for arranging images, quotes and scene breaks, but it's not the mode for drafting flowing prose. Try Write mode and I think you'll find it's the editor you were hoping for. Genuinely useful signal that the toggle isn't obvious enough, though, so thank you!
